Crispy Schezwan Dal Vada

Chef Ajay Chopra gives a Desi Chinese twist to the Crunchy Dal Vada using a combination of tantalizing Ching’s Schezwan Chutney.

Ingredients

  • 1 cup chana dal
  • 1 tbsp ginger
  • 1 chopped green chilli
  • 2 chopped garlic cloves
  • 5 to 6 chopped curry leaves
  • 1/2 chopped onion
  • 1 tbsp coriander leaves
  • 1 tbsp salt
  • 3 to 4 chopped spring onion leaves
  • 4 tbsp oil
  • 2 tbsp chopped garlic
  • 1/2 chopped green, yellow & red capsicum
  • 1 tbsp Ching’s Chilli Sauce
  • 2 tbsp Ching’s Schezwan Chutney

How to make

Step 1: Soak the chana dal overnight.

Step 2: Wash the dal, add the dal in the mixer and coarsley grind it.

Step 3: In a bowl, add chana dal, onions, curry leaves, coriander leaves, ginger, green chilli, salt and crushed peppercorns. Mix well.

Step 4: Make roundels of the mixture and slightly flatten the vada and deep fry on a medium flame till golden brown. Keep aside.

Step 5: Now in a pan, heat some oil, add green chillies, garlic, capsicums, Ching's Chilli Vinegar. Ching's Chilli Sauce, Ching's Schezwan Chutney.

Step 6: Add the vada into the pan, spring onion greens and coriander leave and toss it.

Step 7: Remove it in a serving plate and serve hot.
